garlic tofu + sesame slaw

Ingredients:
100g firm tofu – cubed
1 x garlic clove – minced
1 tbsp fresh parsley – chopped
1 tsp evoo
salt and pepper to taste
1⁄2 cup green cabbage – thinly sliced
1⁄2 cup red cabbage – thinly sliced
1⁄4 cup carrot – thinly sliced
2 tbsp tahini
1 tbsp lemon juice
1 tsp sesame seeds – toasted

What to do:
1. preheat oven to 200°c.

2. line a baking tray with foil. in a small bowl combine garlic, parsley, evoo, salt and pepper. add in cubed tofu and toss to combine. bake for 15-20 minutes until golden brown.

3. combine cabbage and carrot in a large bowl. top with tofu, tahini, lemon juice and toasted sesame seeds to serve.
