rainbow pad thai

this plant-based rainbow pad thai from our signature meal plan is our fave easy weeknight dinner go-to. and yes, it's as yum as it is beautiful.
Ingredients:
300g rice noodles - boiled
1 medium carrot - thinly sliced
1 medium red capsicum - thinly sliced 1 cup broccoli - chopped
75g snow peas - trimmed and sliced 1⁄2 brown onion - diced
1 garlic clove - minced
2 tbs soy sauce
1 tbs lime juice
1 tsp extra virgin olive oil
1 handful of raw almonds - chopped

What to do:
1. place rice noodles into a heatproof bowl and cover with boiling water for 10 minutes. then loosen noodles with a fork, drain and rinse with cold water and set aside.

2. heat oil in a frypan over medium heat. add onion, garlic, carrot, capsicum, broccoli and snow peas. stir fry for 5-7 minutes or until slightly softened.

3. add the rice noodles, soy sauce and lime juice. combine with vegetables and cook for a further 5 minutes or until completely heated through.

4. top with chopped almonds to serve.
